Let’s make it

  1. Cook the pasta

    Cook the spaghetti in salted boiling water until al dente. Reserve 1–1½ cups of pasta water before draining.

  2. Start the sauce

    Mix the cornflour with 2 tablespoons of water. Heat the olive oil in a large saucepan over medium heat. Fry the garlic until crisp and fragrant.

  3. Thicken

    Reduce to medium-low heat. Add the oat milk, nutritional yeast, cashew cheese and cornflour slurry. Once thickened, add reserved pasta water gradually until the sauce reaches the consistency you like. Season with salt and pepper.

  4. Combine and serve

    Fold in the spaghetti until coated. Serve with lemon juice and coriander if desired.
